Lime bars are a bright and tangy dessert that perfectly balances creamy sweetness with a refreshing citrus kick. With a buttery graham cracker crust and a silky smooth lime-infused filling, these bars are a delicious twist on classic lemon bars.
Prepare the Crust: Preheat oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper. Pulse graham crackers into fine crumbs in a food processor. Mix with melted butter and brown sugar in a medium bowl. Press into an even layer. Bake 16-18 minutes until golden. Cool slightly.
Make the Filling: Reduce oven to 325°F (163°C). Beat cream cheese in a large bowl until smooth. Add sweetened condensed milk, egg yolks, lime juice, lime zest, and salt; mix until creamy. Pour over the baked crust.
Bake & Chill: Bake 15-18 minutes until edges are set and center jiggles slightly. Cool 1 hour, then chill 2 hours or overnight.
