Ingredients

  • 1 ½ lbs carrots peeled and cut in half lengthwise if large
  • 2 tbsp unsalted butter melted
  • 2 tbsp honey
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika optional, for depth
  • ¼ tsp cinnamon optional, for warmth
  • cup crumbled feta cheese
  • ¼ cup chopped nuts pistachios, walnuts, pecans, or almonds
  • 1-2 tablespoons pomegranate arils optional, for brightness.
  • 2 tbsp fresh parsley or thyme chopped
  • 1 tsp lemon zest optional, for brightness

Instructions

  • Preheat the Oven: Set it to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • Prepare the Carrots: Place the peeled and halved carrots in a large mixing bowl.
  • Make the Honey Butter: In a small bowl, whisk together the melted butter, honey, olive oil, salt, pepper, smoked paprika, and cinnamon.
  • Coat the Carrots: Pour the honey butter mixture over the carrots and toss until evenly coated.
  • Roast: Arrange the carrots in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway, until they are tender and caramelized.
  • Assemble the Dish: Transfer the roasted carrots to a serving platter. Sprinkle with crumbled feta, nuts, pomegranate arils, fresh herbs, and lemon zest.
