Easy Enchiladas Suizas are creamy, cheesy, spicy white chicken enchiladas made with sour cream, mozzarella cheese, salsa verde, chicken, and corn tortillas.
Add the sour cream and salsa verde to a blender or food processor and blend until smooth.
To Make The Enchiladas Suizas
Preheat oven to 350 degrees F.
Pour about 1/3 of the Enchilada Sauce into the bottom of a 9x13 baking dish.
Fill each tortilla with shredded chicken and shredded Mozzarella cheese.
Roll each tortilla and lay seam-side down into the baking dish.
Pour the remainder of the Enchilada Sauce over the top of the enchiladas.
Sprinkle the remaining shredded Mozzarella cheese over the top of the sauce covered enchiladas.
Bake in a preheated 350-degree oven for 30 minutes or until the enchiladas are heated through and the cheese is melted.

Authentic Flavor Tip:Traditional Enchiladas Suizas are made with Queso Manchego (the Mexican melting cheese, not the Spanish hard cheese) or Queso Oaxaca.Since these can be hard to find in some grocery stores, I use Mozzarella in this recipe because it mimics the perfect melt and mild, creamy flavor of the authentic version. If you can find Oaxaca at your local store, definitely grab it for an extra authentic touch!To soften hard corn tortillas, wrap a stack of about 6 tortillas with damp paper towels and microwave for about 1 minute. Then they should be soft and pliable so you can roll them.
