Make the Spice Rub: In a small bowl, mix the smoked paprika, chili powder, garlic powder, onion powder, cumin, salt, and black pepper.
Season the Fish: Coat both sides of each fillet evenly with the spice mixture, pressing lightly so it adheres.
Heat the Pan: In a large skillet or cast-iron pan, heat 2-3 tablespoons of olive oil over medium heat until shimmering.
Cook the Fish: Add the fillets to the pan and cook for about 4 minutes on the first side, then flip and cook for another 3 minutes, or until the fish is opaque and flakes easily with a fork. Remove from heat and let it rest for a minute.
Prepare the Tartar Sauce: In a small bowl, mix the mayo, fresh dill, dill relish, shredded onion, and lemon juice. Stir well and refrigerate until ready to use.
Assemble the Sandwich: Toast the hamburger buns if desired. Add the lettuce, tomato slices, red onion and then the cooked Mahi Mahi fillet, to the bun. Spread a generous amount of tartar sauce on the fish. Top with the other half of the bun.
Serve: Enjoy with fries or chips, coleslaw, lemon wedges, and pickle spears on the side.
