Ingredients

  • 2 15 count packages, each Phyllo shells or phyllo dough
  • 2 tablespoons melted butter
  • 8 ounce brie cheese
  • 1/2 cup Red Pepper Jelly
  • Fresh thyme or rosemary sprigs

Instructions

  • Preheat your oven to 400°F. Spray a cupcake pan with cooking spray.
  • Prepare the Phyllo Shells: Unroll the phyllo pastry and separate half of the sheets. Cut the pastry sheets into small circles, approximately 3 inches wide. You can use a cookie cutter or scissors.
  • Assemble the Appetizers: Place the pastry circles in the muffin tins and pressdown to form small cups. Brush with melted butter.
  • Place a cube of Brie cheese in the center of each puff pastry cup.
  • Top each Brie cube with a small dollop (about 1/2 teaspoon) of red pepper jelly.
  • Bake the Appetizers: Bake in the preheated oven for 8-12 minutes, or until the phyllo is browned and the cheese is melted.
  • Garnish and Serve: Allow the appetizers to cool slightly before garnishing with fresh thyme, rosemary, or crushed nuts if desired.
