  • 1/2 cup butter
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 2 1/2 cups blueberries
  • 2 tablespoons sugar to sprinkle on top
  • 1 teaspoon vanilla


  • Preheat oven to 375 degrees F.
  • Grease muffin tins well with butter; grease the top surface of the pans as well.
  • Using a stand mixer on low speed beat the butter together with the sugar until fluffy. Add vanilla.
  • Add eggs one at a time and mix until blended.
  • In a separate bowl sift together the dry ingredients;
  • Add the dry ingredients to the eggs and butter mixture, alternating with milk.
  • Mash 1/2 cup of blueberries and stir into the mixture.
  • Add the rest of the berries whole and stir. Pile the batter high in each muffin cup, and sprinkle the sugar over tops of the muffins.
  • Bake at 375 degrees for 30 minutes.
