Notes

Recipe Tips
  • Once the eggs have boiled, allow them to sit for 15 minutes before adding them to a bowl of ice cold water. This will make peeling the eggs that much easier.
  • Using a piping bag, a cookie scoop, or even a Ziploc bag that’s been cut in the corner, is a great way to produce clean-looking pimento deviled eggs. You can also spoon the egg yolk filling into the boiled egg whites which will give you more of a rustic appearance.
  • If you’re serving to a larger crowd, double the quantities of all the ingredients in this recipe.
  • If, for whatever reason, you feel that the egg yolk mixture is not thick enough for your liking, simply add in extra egg yolks. You may need to taste test and adjust the spices and seasoning when adding in additional egg yolks. Otherwise, another trick for making the filling a little thicker is to add in more mayonnaise.
  • Don’t use up all the pimentos in the egg filling. Save a few for garnishing the eggs with the green onions just prior to serving.
  • Save any excess egg filling to use as a delicious snack spread on crackers!
