4 peaches (seeded, peeled and chopped) 2 medium Roma tomatoes 1/2 onion, chopped 2 cloves garlic, minced 1 small red pepper, chopped 1 to 2 jalapenos (seeded and diced) 2 tablespoons lime juice (freshly squeezed is best) 1/4 cup cilantro, chopped 1/4 teaspoon taco seasoning (I use a low salt version)
Recipe Tips:
Be sure to use fresh peaches that are ripe but not overripe. You want them to hold their shape and not get mushy.
Use fresh ripe Roma tomatoes because they have great flavor and generate less liquid than other types of tomatoes.
Drain the tomatoes before adding to the salsa to prevent too much liquid getting into the salsa.
Use a slotted spoon to drain any excess liquid when serving.
