Mexican Turkey Garbanzo Bean Salad 1 16-ounce package Honeysuckle White® Ready to Season Turkey Breast Strips 1-1/2 Tablespoons taco seasoning (either store bought or homemade) Salt and pepper to taste 1 Tablespoon olive oil 2 15-ounce cans garbanzo beans, drained 2 cucumbers, chopped 8 baby carrots, chopped 2 avocados, peeled, pitted, and chopped 1/2 cup queso fresco, crumbled 1/4 cup fresh cilantro, chopped Cilantro Lime Vinaigrette Dressing
Mexican Turkey Garbanzo Bean Salad Place the Honeysuckle White Ready To Season Turkey Breast Strips in a flat bottomed dish or bowl.
Sprinkle salt, pepper, and taco seasoning over all sides of the turkey.
Add oil to a skillet over medium heat on top of the stove and cook the turkey for about 5 minutes.
In a large bowl combine the rinsed and drained garbanzo beans, chopped cucumbers, chopped carrots, avocado bites, and cilantro in a bowl.
Add the cooked turkey on top. Drizzle the Mexican Turkey Garbanzo Bean Salad with the Cilantro Lime Vinaigrette.
Sprinkle with queso fresco cheese.
Cilantro Lime Vinaigrette Dressing In a bowl whisk together the olive oil, lime juice, sugar, apple cider vinegar, cilantro, garlic, salt, pepper, and Mexican oregano.
