Season the pork with salt, pepper, onion powder, garlic powder, and sage. In a large skillet over medium high heat add 1 tablespoon oil. Brown the pork. Turn to brown each side. Remove pork. Set aside.
Add more oil if needed. Add chopped onion and cook until soft. Add garlic and cook for about 1 minute. Add red wine and cook for about 2 minutes. Add chicken broth. Then add cranberries, brown sugar, mustard, and hot sauce. Simmer for about 5 minutes.
Add pork back into the pan with the sauce. Stir pork and cook until the meat is fully cook and the sauce has glazed the pork.
