Greek Potato Salad is an easy, healthier potato salad with a Greek vinaigrette dressing, feta cheese, black olives, and tomatoes, perfect for a picnic.

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 1/2 teaspoons fresh lemon juice
  • 1 teaspoon white sugar
  • 2 teaspoons Greek seasoning or make your own, divided
  • 1/2 teaspoon coarse salt or to taste, divided
  • 1/2 teaspoon ground black pepper or to taste, divided
  • 12 red potatoes
  • 1/2 cup black olives
  • 1/2 cherry tomatoes sliced in half
  • 1/2 cup crumbled feta cheese

Instructions

  • Make the Greek Vinaigrette by combining oil, vinegar, lemon juice, sugar, half of Greek seasoning, and half of salt and pepper. The vinaigrette can be done a day ahead.
  • Drizzle potatoes with oil and sprinkle with salt and pepper, and Greek seasoning; toss to coat. Grill potatoes, covered, over medium heat or broil 4 in. from the heat for 20-25 minutes or until tender.
  • Place in a large bowl. Add the black olives and tomatoes. Pour the vinaigrette over the tomatoes. Toss to coat. Sprinkle with feta cheese. Serve salad warm or cold.
