Lemon Asparagus Asiago Brown Rice
Lemon Asparagus Asiago Brown Rice glams up gluten free whole grain brown rice to make a delicious, elegant yet easy side dish for a quick weeknight meal or an impressive gourmet meal.
- 2 cups Minute® Whole Grain Brown Rice uncooked
- 1-3/4 cups reduced sodium chicken broth
- 2 tablespoons lemon juice
- 1/2 pound fresh asparagus cut into 2-inch lengths
- 1/2 cup shredded asiago cheese
In a medium pan over medium high heat, bring chicken broth and lemon juice to a boil.
Stir in Minute® Whole Grain Brown Rice; Return to boil. Reduce heat to low; cover and simmer 5 MINUTES.
Meanwhile in aa separate pan add asparagus t boiling water for 3 - 4 minutes. Drain
REMOVE from heat and stir; cover. LET stand 5 MINUTES or until water is absorbed. Fluff with fork. Stir in asparagus and asiago cheese. Serve hot.
