Instructions

  • In a medium skillet over medium heat, cook the bacon. Stir in the chopped apples and pour in the maple syrup. Remove from heat. Set aside.
  • in a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. In a large measuring cup, stir together, milk, oil, and the egg. Pour the milk, oil & egg mixture into the large bowl with the flour mixture and whisk until all the lumps are gone.
  • Stir in half of the apple maple bacon mixture into the pancake batter.
  • Heat a large skillet over medium heat, and add oil. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
  • Divide the pancakes between four plates.
  • Top the pancakes with the Apple Maple Bacon Topping. Drizzle maple syrup over the top of each stack of pancakes.
