In a medium skillet over medium heat, cook the bacon. Stir in the chopped apples and pour in the maple syrup. Remove from heat. Set aside.
in a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. In a large measuring cup, stir together, milk, oil, and the egg. Pour the milk, oil & egg mixture into the large bowl with the flour mixture and whisk until all the lumps are gone.
Stir in half of the apple maple bacon mixture into the pancake batter.
Heat a large skillet over medium heat, and add oil. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
Divide the pancakes between four plates.
Top the pancakes with the Apple Maple Bacon Topping. Drizzle maple syrup over the top of each stack of pancakes.
