1 16-ounce package La Moderna Rotini Pasta 1 tablespoon olive oil 1 teaspoon minced Garlic 1/2 onion chopped 1 red bell pepper chopped 1 green bell pepper chopped 1 cup corn 1 can chopped green chiles 1 cup shredded cooked chicken 1 cup chicken broth 2 cups Heavy Cream 1-1/2 cups shredded Monterey jack cheese Salt & Black Pepper to taste
Cook the La Moderna Rotini pasta per package directions. Rinse, drain and set aside.
In a large skillet over medium-high heat, add olive oil.
Add onions, red and bell pepper, corn, and garlic and saute until onions are translucent. Add chicken and green chiles. Season with salt and pepper.
Add shredded cooked chicken and chicken broth. Add heavy cream and reduce heat.
Add the La Moderna Rotini and toss.
Stir in cheese and cilantro.
