Sweet Potato Toast (Topped with Apples, Bacon and Gorgonzola)

This Sweet Potato Toast, topped with Apples, Bacon and Gorgonzola, toasts sweet potatoes slices and tops them with bacon, apples, onions and crumbled Gorgonzola.

Ingredients

  • 1 large sweet potato washed and dried
  • 2 slices bacon cut into 1/2" slices
  • 1/4 onion diced
  • 1/2 apple diced
  • 2 Tablespoons crumbled Gorgonzola cheese

Instructions

  • Preheat oven to 400 ℉.
  • Place a wire rack on a baking sheet.
  • Slice off each end of the sweet potato so each end is flat.
  • Slice the sweet potato lengthwise into ¼-inch thick slices.
  • Arrange sweet potato slices in a single layer on the wire rack.
  • Bake for 15 minutes or until the sweet potato slices are tender but not fully cooked.
  • Remove the baking sheet from oven.
  • Place the sweet potato slices in a toaster. Toast until hot and edges are crispy. The amount of time required will depend on your individual toaster.
  • While the sweet potatoes are in the oven, cook the bacon pieces in a skillet over medium heat. Once cooked, add the diced onions and apples and cook for about 5 minutes.
  • Once the bacon, apples, and onions are cooked and the sweet potatoes have been toasted, top the sweet potato toast with chopped cooked bacon, apples, and onions.
  • Crumble the gorgonzola cheese on top of each sweet potato toast.
