  • Preheat oven to 350 degrees F.
  • Either butter and flour a loaf pan or spray it with baking spray.
  • In a medium mixing bowl, add the softened butter and 1 cup sugar and mix together.
  • Add the mashed bananas, heavy cream and eggs, and mix well. Stir in the vanilla.
  • Add the flour and baking powder, mixing just until moist.
  • In a medium bowl add the fresh cranberries with 1/4 cup sugar. Toss to coat.
  • Stir the sugar-coated cranberries into the batter.
  • Spread batter evenly in a loaf pan.
  • Sprinkle any remaining sugar over the top of the batter.
  • Bake in a preheated oven for 1 hour. Check and may need to bake for 10 more minutes.
  • Makes 1 loaf.
