Pesto, gooey mozzarella cheese, with fire-roasted tomatoes, on grilled and buttered sourdough bread topped with parmesan cheese, these Tomato Pesto Grilled Cheese Sandwiches make the best, flavor-bursting grilled cheese that you have ever tasted!
Butter 1 side of all slices of bread with about ½ tablespoon each, set butter side down.
Spread 1 tablespoon of pesto on the opposite side of each slice of bread.
Top 2 of the slices of bread, on the pesto side, with 1 slice of cheese, sliced tomatoes, about ½ tablespoon parmesan, another piece of cheese, and then top with another slice of bread- pesto side down on the sandwich.
Cook on medium heat until the bottom slice of bread is golden, repeat on the other side.
Sprinkle half of the rest of the parmesan on top and enjoy!
Repeat this process with the next sandwich and enjoy your flavor bursting, warm and cheesy sandwich!

This sandwich tastes best when enjoyed right away.
Feel free to halve the recipe for 1 sandwich, or multiply for more!
