Dragon Fruit Mojito Recipe

With only 5 minutes of prep, impress the happy hour party guests with this stunningly beautiful pink Dragon Fruit Mojito cocktail with rum, lime, dragon fruit, sugar, and mint.

Ingredients

Dragonfruit Mojito

  • cup frozen Dragon Fruit cubes
  • 3 sprigs of mint
  • 1 oz lime juice
  • 2 Tablespoons sugar
  • 2 oz white rum
  • Ice cubes
  • Club soda to fill glass (amount depends on size of glass)

Garnish

  • extra mint leaves
  • slice of lime

Instructions

  • Remove the dragon fruit from the freezer, place it in a bowl, and let it sit for 10 minutes before using.

  • Place dragon fruit cubes in the bottom of your highball cocktail glass and use a muddler to soften the dragon fruit cubes until you get some juice out of the cubes and the dragon fruit is smooth.
  • Add the mint leaves, and continue to muddle together the dragon fruit and mint, until you have released the oils in the mint.

  • Add the sugar and lime juice. Continue to muddle the ingredients together until you have a semi-frozen mixture and the mint has released its oils.
  • Pour in the rum and mix with a cocktail spoon.

  • Fill the glass almost to the top with ice and club soda.

Notes

  • Availability - You should be able to find frozen dragon fruit cubes at large grocery stores, as well as Target, Costco, and Amazon.
  • Plan Ahead - If you can't find them locally, you can cut up the dragon fruit and freeze it ahead of time so that the frozen dragon fruit cubes are ready when you are ready to prepare the mojitos.
  • Clear Rum - To get the beautiful color of this mojito, you must use clear rum and not gold rum, dark rum, or black rum.
  • Don't Skip The Garnish - Since these dragon fruit mojitos make such a pretty presentation, don't skip the garnish because it adds to the drink's beauty.
