Slow Cooker Steak Bites Recipe

Slow Cooker Steak Bites are tender, buttery sirloin steak cubes with caramelized onions, and garlic, covered in an au jus gravy for a delicious comfort food meal!

Ingredients

  • 3 pounds sirloin steak cut into bite-sized pieces
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 small sweet onion thinly sliced
  • 3 cloves garlic thinly sliced
  • 1 cup unsalted beef stock
  • 1 ounce packet au jus gravy mix
  • 4 tablespoons unsalted butter thinly sliced
  • fresh chopped parsley for garnish optional

Instructions

  • In a large bowl toss the steak with the salt and pepper to combine.
  • Heat a large skillet over medium-high heat, and add half of the oil to the hot skillet.
  • Add the steak pieces in batches, sear the steak bites until all sides are browned, and place them into an 8-quart slow cooker. Add more oil to the pan if needed.
  • Once all the steak is seared, add the onion and garlic to the slow cooker, and toss with the steak bites.
  • Pour the beef stock into the slow cooker.
  • Sprinkle the au jus packet over the top.
  • Lay slices of the butter over the top.
  • Cover the slow cooker and cook on high for 3-4 hours or low for 6 - 8 hours, stirring occasionally
  • Serve with a garnish of fresh parsley if desired.

Notes

  • Type of Beef - Round steak, stew meat, or chuck roast can be used in place of sirloin.
  • Searing Optional - The second step, where you sear off the steak bites, is optional. This does give the steak bites more flavor, but if you don’t have time, you can skip this step. Place the seasoned steak bites directly into the slow cooker. Discard the oil entirely. Continue on to step 3.
  • Add Herbs - You can add more herbs to make this even more flavorful. A few sprigs of thyme or rosemary would add a delicious flavor.
  • Control The Salt - Use unsalted beef broth instead of beef stock if you can’t find it. This option lets you more fully control the amount of salt in the recipe.
  • Reheating - To reheat this recipe, you can add the steak tips in the slow cooker, in a pot on the stove, or in the microwave until warm.
  • Storing - Keep leftovers for up to 3 days. Freeze for up to 3 months.
