Ingredients

Enchiladas Suizas Sauce

  • 1 (16-ounce jar) salsa verde
  • 1 cup sour cream

Enchiladas Suizas

  • 2 cups shredded cooked chicken (Can use rotisserie chicken)
  • 1-1/2 cups Mozzarella Cheese
  • 12 corn tortillas

Instructions

To Make The Enchiladas Suizas Sauce

  • Add the sour cream and salsa verde to a blender or food processor and blend until smooth.

To Make The Enchiladas Suizas

  • Preheat oven to 350 degrees F.
  • Pour about 1/3 of the Enchilada Sauce into the bottom of a 9x13 baking dish.
  • Fill each tortilla with shredded chicken and shredded Mozzarella cheese.
  • Roll each tortilla and lay seam-side down into the baking dish.
  • Pour the remainder of the Enchilada Sauce over the top of the enchiladas.
  • Sprinkle the remaining shredded Mozzarella cheese over the top of the sauce covered enchiladas.
  • Bake in a preheated 350-degree oven for 30 minutes or until the enchiladas are heated through and the cheese is melted.

Notes

Note: To soften hard corn tortillas, wrap a stack of about 6 tortillas with damp paper towels and microwave for about 1 minute.  Then they should be soft and pliable so you can roll them.
