1.25lbsboneless skinless chicken breastscut into thin strips

1/3cupflour
Spicy Avocado Sauce:
2small avocadospitted and peeled
2tbspsour cream
2tbspdiced jalapenosoptional
1tbspdiced onions
Juice from 1/2 lime
1tbspchopped cilantro
1/2tsphot sauceor more to taste
Instructions
Preheat oven to 400 degrees. Spray a large baking sheet with cooking spray.
In a shallow dish add flour.
In another bowl, which one egg.
Combine the bread crumbs, parmesan cheese and all of the seasonings for the chicken fingers in a shallow dish. Mix well.
Dip the chicken strips in the flour, and then the egg, and then the breadcrumbs, and tap off excess bread crumbs. Place the chicken strips on the prepared baking sheet in a single layer. Spray the tops with cooking spray. Cook until golden brown and cooked through, about 20 minutes.
In a medium bowl, mash the avocado and sour cream together with a fork. Fold in the jalapenos, onions, lime juice, cilantro, and hot sauce then season to taste with salt and pepper. Serve the chicken fingers with the avocado sauce on the side for dipping.
