Last year for our progressive Easter Dinner post, which included my Pork Loin with Dijon Cream Sauce and Cornichons recipe, I was introduced to Revol, a French culinary porcelain manufacturer that has been making high-end cookware and serveware since 1789. I received their cook & play rectangular baker, which I loved because it was made from a high quality porcelain, and could go from the freezer to the oven to the tabletop. This year, I contacted Revol and told them how much I loved their bakeware. They told me about their new product line by Chef Elizabeth Karmel called Elizabeth’s Everyday Essentials, and sent me the Covered Casserole Dish from that line to try. It is a beautiful, large, white porcelain covered dish casserole dish witha clear glass lid. I love the versatility of it because it can go from the stovetop to the oven to the freezer and back, and then into the dishwasher. Since it can be used on both the stovetop and in the oven, it can be used to cook anything. It is easy to take it with you to a party or a potluck because of the lid.
With Easter around the corner, I decided to make an amazing overnight breakfast casserole with fresh blueberries and strawberries and real maple syrup that would be perfect for feeding a crowd for a holiday breakfast or brunch. This covered casserole dish is a perfect dish to use for this Blueberry Strawberry French Toast Casserole recipe.
It is super easy to make this delicious Blueberry Strawberry French Toast Casserole. First, cut day-old French or Italian bread into 1-inch cubes and place in the bottom of the casserole dish. Then cut 2 blocks of cream cheese into small cubes and place on top of the bread.
Next, sprinkle 1 cup (or more) of fresh blueberries over the top of the cubes of cream cheese and bread.
Then sprinkle with a cup of chopped strawberries.
Cover with the remaining cubes of bread.
To make the custard, you will start with 12 eggs. Yes. You heard me right: 12 eggs. I never claimed this dish was diet or healthy. It is a holiday. Just go for it.
Mix in milk, pure vanilla, and real maple syrup with the eggs.
Pour the egg custard mixture over the bread, berries, and cream cheese. Press down the bread cubes to be sure they soak in the egg custard.
Cover and let it sit in the refrigerator overnight.
Then in the morning, let it sit for about 30 minutes first. Then bake covered for 30 minutes and uncovered for another 30 minutes.
The Blueberry Strawberry French Toast Casserole will be golden and crisp on the top and soft in the middle, but not soggy.
Then make this sweet, rich gorgeous Blueberry sauce to serve on top of it or serve on the side. If for some reason, you don’t serve the blueberry sauce, then you may want to mix the cream cheese with powdered sugar and a little milk to spread over the bread cubes. That will add sweetness. Most of the sweetness is in this sweet, rich blueberry sauce. So I highly recommend making it. In fact, make a double batch because it is great to use on pancakes, waffles, or anything.
When you serve this Blueberry Strawberry French Toast Casserole dish, be sure to generously drizzle that sweet, rich blueberry sauce over the top, and add a dollop of whipped cream.

Blueberry Strawberry French Toast Casserole Recipe
Ingredients
French Toast
- 12 slices day-old French or Italian bread cut into 1-inch cubes
- 2 8 ounce packages cream cheese, cut into 1 inch cubes (Can use light)
- 1 cup fresh blueberries rinsed and drained
- 1/2 cup fresh strawberries sliced
Custard
- 12 eggs beaten
- 2 cups milk I used Almond Milk
- 2 teaspoons vanilla extract
- 1/3 cup maple syrup
Blueberry Sauce
- 1 cup water
- 1 cup white sugar
- 2 tablespoons cornstarch
- 1 cup fresh blueberries
- 1 tablespoon butter
Instructions
- Spray a casserole dish or 9×13 baking dish with cooking spray. Arrange half the bread cubes in the dish, and top with cream cheese cubes. Sprinkle 1 cup blueberries and 1/2 cup strawberries over the cream cheese, and top with remaining bread cubes.
- In a large bowl, mix the eggs, milk, vanilla extract, and syrup. Pour over the bread cubes. Cover, and refrigerate overnight.
- Remove the bread cube mixture from the refrigerator about 30 minutes before baking. Preheat the oven to 350 degrees F (175 degrees C).
- Cover, and bake 30 minutes. Uncover, and continue baking 25 to 30 minutes, until center is firm and surface is lightly browned.
- In a medium saucepan, mix the sugar, cornstarch, and water. Bring to a boil. Stirring constantly, cook 3 to 4 minutes. Mix in the remaining 1 cup blueberries. Reduce heat, and simmer 10 minutes, until the blueberries burst. Stir in the butter, and pour over the baked French toast

Is there any way you can cook it the next morning in the crock pot? It looks like you prepared it in a crock. I need to serve 2 dishes on Easter for 25 people, and I have only one standard oven. I need the oven for an egg bake and I don’t think I should bake both of these at the same time. It looked like you prepared this in a crock. Thanks!

Hi Vickie, I did not cook this in a crockpot, but in the oven. While I know others have prepared French Toast casserole in the slow cooker, I have not. You will probably need to increase the milk (maybe even double the milk) in order to increase the liquid for the crockpot.

Hello, I am just starting to cook, or rather to try new things to cook. My boyfriends mom made a French toast casserole for brunch this past Easter Sunday, and I loved it! She of course is the cook who doesn’t measure anything or really follow recipes. I of course need them. I want to try and make this but I know I wouldn’t need a large “one” to feed 10. Do you have a version of the recipe for a smaller batch? I was told that just cutting a recipe in half is not always the best solution. Thank you so much for sharing! I am a young woman who depends on recipes for variety and learning how to cook lol!

Hi Paris, Congratulations on trying new recipes. This is a great one. It is one of our family’s favorites. While sometimes it might be difficult to cut the ingredients in half, it will work just fine with this recipe. Instead of 12 pieces of toast, use 6, instead of 12 eggs, use 6. I don’t see a problem with cutting the ingredients in half.

Hi Monica, this dish makes a lot. It depends on how hungry everyone is. If you have that many hungry people, then I would recommend doubling the recipe.

We decided to try this for Easter breakfast. I did not buy enough blueberries but had plenty of strawberries so I made the syrup with strawberries instead of the blueberries and it was absolutely delicious. This is one we will add to our menu. It looks and taste like something you would order from a fancy restaurant.

I’m making this for my family’s Thanksgiving brunch (which we are doing Friday. Hurray for working in healthcare and never getting holidays off!). I’m making it at my house and bringing it to my parents’ about an hour away.
The blueberry sauce- is that something that needs to be poured on right before eating? Will it make the casserole soggy if I add it before I drive over?
Also- is this casserole okay at room temp, or should I heat it up when I get to my parents’?

I would recommend assembling the French Toast Casserole and letting the custard soak overnight in the refrigerator. Make the blueberry sauce at your house but DON’T pour it over the the French Toast Casserole. Pour it into an airtight container with a lid to transport it (separately from the French Toast casserole.)
Then when you get to your parents house, put the French Toast Casserole in the oven, reheat the blueberry sauce (either on the stove or in the microwave), and pour the blueberry sauce over the French Toast Casserole just before serving.

If I’m having a hard time getting fresh fruit, would this work with frozen fruit that is thawed?

Thanks for reaching out. Yes, you could use frozen fruit that was thawed. You might have to drain any excess liquid first, but that should work.

Another question, you say 1/2 cup strawberries in one spot and 1 cup on another spot. Which one is it?

1/2 cup strawberries is correct. I updated the instructions to reflect that. However, it would not hurt anything if you added another 1/2 cup strawberries. It would just have more strawberry flavor.
