Ingredients

Cucumber Tomato Salad

  • 1 pint cherry tomatoes halved
  • 1 cucumber sliced and quartered
  • 1/2 red onion chopped
  • 1/2 cup Cotija Cheese Crumbled
  • 1/4 cup chopped cilantro

Instructions

Cucumber Tomato Salad

  • In a medium bowl, add the tomatoes, cucumbers, and onions and toss. Sprinkle in the Cotia Cheese and Chopped cilantro.

Cucumber Tomato Salad Vinaigrette Dressing

  • In a measuring cup or in a bowl, stir together the olive oil, red wine vinegar, minced garlic, Mexican oregano and salt and pepper.  If desired, add sugar, otherwise, omit the sugar.
  • Pour the vinaigrette over the cucumbers, tomatoes, and onions and let marinate.
