12 ounce package spaghetti 6 slices of center cut bacon 1/2 onion sliced 2 cloves garlic minced 3 cups fresh baby spinach leaves 1-1/2 cups shredded Italian cheeses Mozzarella, Parmesan, Asiago
Cook the spaghetti, according to package directions. Drain and set aside.
In a large skillet over medium heat, cook the bacon until crisp. Drain, except for about 1 tablespoon bacon fat.
Add sliced onion and cook for about 3 or 4 minutes until softened. Add minced garlic and cook for about 1 minute.
Add the spinach and stir for about 2 or 3 minutes until it is wilted.
Add the drained spaghetti to the skillet, and toss to even distribute ingredients.
Sprinkle with shredded cheese, and serve.
