Ingredients

  • 2 Tablespoons olive oil
  • 1/2 onion
  • 1/2 red bell pepper
  • 1/3 green bell pepper
  • 1/2 10-ounce package fresh baby spinach
  • 2 teaspoons minced garlic
  • 6 eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 Tablespoon Greek Seasoning
  • 2 cups shredded cheddar cheese
  • 1/2 cup crumbled feta cheese

Instructions

  • Preheat oven to 350 degrees F.
  • Spray 9" pie pan with cooking spray.
  • In a large skillet over medium heat, add olive oil. When the oil is hot, add the onions, red and green bell peppers. Cook until the vegetables are soft.
  • Add spinach. It will look like a LOT. Don't worry, it cooks down in about 2 minutes.
  • Add minced garlic and stir for about 1 minute.
  • In a large bowl, whisk together the eggs and milk. Add salt and pepper to taste.
  • Add in the Greek Seasoning.
  • Stir in Cheddar cheese and crumbled feta.
  • Add in the spinach and other vegetables in the egg mixture. Stir until combined.
  • Pour the egg mixture into a prepared 9" pie pan.
  • Bake in a preheated oven for about 30 minutes.
  • Let rest for about 10 minutes.
