Taco Lasagna
Taco Lasagna is a traditional lasagna casserole with lasagna noodles but adds Mexican taco seasoning, enchilada sauce, and Mexican and Cheddar cheese that is sure to be a family favorite.

Preheat oven to 350 degrees F.
In a large skillet over medium heat, brown the sausage and ground beef.
Add the chopped onion and minced garlic and cook with the beef mixture.
Add the taco seasoning and salt and pepper and stir.
After the beef and sausage is browned, add the enchilada sauce, tomato sauce and diced tomatoes and chilies.
Let the meat sauce simmer on low.
In a separate pan over high heat bring water to a boil. Add lasagna noodles and cook per package instructions. Drain and set aside.
In another bowl, stir together the ricotta cheese and egg. Stir in 1 cup of shredded cheese.
To assemble the lasagna, spoon 1/2 cup meat sauce on the bottom of a lasagna pan.
Layer 3 - 4 lasagna noodles over the meat sauce.
Spread 1/2 of the ricotta cheese mixture over the lasagna noodles.
Sprinkle 1/2 cup shredded Mexican Blend cheese.
Spoon half of the meat sauce over the top. Spread evenly.
Repeat layers.
Top with meat sauce and shredded Mexican cheese.
Bake in a preheated oven for 20 - 30 minutes until the lasagna is heated through and the cheese is melted.
Remove from oven and let sit for about 10 minutes before serving.
